Method

  1. Step

    10 Min

    Slice the fennel very finely and place in a bowl with the spring onions, parsley mayonnaise and lemon juice. Toss together and seasoned with salt and pepper to taste. Set aside.

    Fly the capers in a little olive oil until crisp; set aside. Halve, peel and pit the avocados, then cut each half in two.

    Arrange the fennel ‘slaw’, avocado and prawns on the toasted bread. Sprinkle with the fried capers and a little salt and pepper. Serve with lemon wedges.
