Bearnaise Sauce

Mix clarify butter, white wine,shallots, chopped tarragon, salt and other ingredients. Then cook it fast and easy.

    Clarify butter in a small saucepan over low heat. When the butter starts to foam, let sit aside until the butter separates from the fat.

    Sieve the butter from the fats and discard the solids.

    Place the vinegar, white wine in a saucepan; add shallots, chopped tarragon, peppercorns and salt to taste.

    Place on a medium gentle heat and reduce by half. Discard shallot mix and cool slightly.

    Lightly beat the egg yolks in a metal bowl with 1 tsp. of water.

    Add 2 tbsp. reduction mix and 1 tsp. lemon juice

    Beat eggs over a water bath making sure the bowl isn’t hitting the water.

    Beat till thicken, take off heat and slowly add the melted butter, whilst beating vigorously.
