    Pre heat oven to 150.C. Heat the oil in a large pot over medium heat.

    Season the ribs with the salt and pepper. Brown ribs turning continuously until well coloured. Colour in batches and remove.

    Stir in the onions, garlic, carrot and celery and begin to sweat till translucent.

    Add rosemary, thyme, bay leaves and sweat for a further 3 mins.

    Add wine and begin to deglaze the pan.

    Stir in the chopped tomatoes, brown sugar, balsamic vinegar and veal stock. Simmer for about 10 minutes till slightly thicken.

    Remove pot from heat, place short ribs in a heavy roasting pan

    Pour sauce from pot over ribs, cover with foil and braise for 2 ½ - 3 hours.

    Check after 2 hours sauce should be thicken and meat should be slightly falling off the bone. Season well
