Beetroot With Yogurt And Zaatar

Spicy Food, Wanna Taste! Cook It Fast.

Add beetroot, garlic clove, chilli, yogurt and other ingredients. Preheat the oven to 2000 c/fan 180 oc/gas Then cook it fast and serve.

    Preheat the oven to 2000 c/fan 180 oc/gas 6.Wash the beetroot and put in roasting tin. Cook, uncovered, for about 1 hour or until a knife slices easily into the Centre. Once they are cool enough to handle, peel and cut each one into 6 pieces. Allow to cool. Whizz the beetroot, garlic ,chilli and yogurt to a smooth paste in a food processor. Transfer to a large mixing bowl, then stir in the date syrup ( or maple syrup), olive oil, za’atar and salt. Taste and add more salt if you like.

    Transfer the puree to serving bowls and use the back of a spoon to spread the mixture around. Scatter the spring onion, hazelnuts and cheese on top, then drizzle with a bit of oil. Serve at room temperatu re.
