Pour 300ml Tepid Water Into a Bowl, Sprinkle With the Dried Yeast and Whisk a Fork Until Dissolved. Add the Olive Oil and Set Aside Put the Flour and Salt Into an Electric Mixer Fitted With a Dough Hook. With the Mixer Running at a Slow Speed, Add All but 2 Tablespoons of the Yeast Liquid. Add the Remaining Liquid to Incorporate the Last of the Flour. Knead for 15-20 Minutes Until Smooth and Elastic. Turn Onto a Floured Surface and Knead by Hand for 1 Minute to Form a Smooth Ball.

Add the remaining liquid (plus a dash extra if needed) to incorporate the last of the flour. Knead (still on a slow speed) for 15-20 minutes until smooth and elastic. Turn onto a floured surface and knead by hand for 1 minute to form a smooth ball. (Alternatively, mix and knead the dough entirely by hand)

    Place the dough in a lightly greased large bowl and brush the top with a little olive oil to prevent a crust forming. Cover the bowl with plastic wrap and leave the dough to rise in a warm place for 1 hour or until doubled in size.
