Bridget Onion and Feta Tart

This salmon is a cooling summer dish. For a slightly sweet version, add a few tablespoons of freshly squeezed orange juice to the yogurt sauce. This Bridget Onion and Feta Tart is simply delicious and you're gonna wanna make an easy way for your family.

  1. Step


    Place olive oil & onion in a saucepan over medium heat & cook for 20 min. Add sugar, balsamic vinegar, salt & pepper.Cook until the onion is soft & caramelized. Set aside to cool.

    Preheat the oven to 2200C. Roll out the pastry to a 20x40cm rectangle. Trim the edges & place on a baking tray.Score a 1cm border around the edge of the through to the bottom.

    Prick the pastry with a fork & sprinkle the Parmesan Cheese within the scored edges. Place the onion on top of the pastry base.Bake until the pastry is puffed & golden brown. Remove from the oven and sprinkle with the feta cheese and oregano leaves.
