Buttermilk Pancakes Recipe

  1. Step

    5 Min

    In a clean bowl whisk the egg whites to soft peaks. In a separate bowl place the buttermilk, butter and vanilla extract and whisk lightly to combine. In another bowl place flour, sugar, bicarb, baking powder and salt and stir to combine.

    Add half the dry mixture to the buttermilk mix and whisk until nearly smooth, not for too long. Add in the remainder of the dry mixture and fold lightly, remaining lumpy.

    Add the whisked egg whites, and fold through ensuring the mixtures are combined but not overworked. The batter should be thick and lumpy, not a smooth paste. Allow the batter to rest for 30 minutes before using.

    Warm a heavy frying pan over a moderate heat with a few drops of rapeseed oil and rub around the base of the pan. Spoon in the 2 tablespoons of batter per pancake.

    Allow to cook slowly, approximately 3-4 minutes, when lots of little bubbles appear on top and the sides look a little dry they are ready to be turned. Flip and cook for a further 3 minutes.
