Chicken Skin Jus Recipe

    Preheat oven to 270C. Place all ingredients except the wine and stock into a large roasting tray. Place into the smoking hot oven and cook until the skins have browned off well, stirring 3-4 times during the process. Once all the fat has dropped off the skins, remove tray from the oven, drain off the fat and discard. Place the chicken skin and vegetable mix into a pan with the white wine and stock and bring up to a simmer. Simmer for 30 minutes, skimming any further impurities that come to the surface. After 30 minutes pass through a black chinois before returning to the pan. Rapidly reduce to 2 litres, skimming when required.
