Add plain flour, buttermilk, vegetable oil, egg yolk, lemon juice and all the other ingredients and cook it fast.Then serve.

    1 For aioli, combine garlic and 2 tsp sea salt In a mortar and , using a pestle, pound to a paste, then transfer to a food processor, Add Egg yolks and lemon juice and process until Just combined, then, with motor running, add Oil in a thin stream until emulsified and thick, Season to taste with sea salt, freshly ground Black pepper and lemon juice. Makes 1 cup.

    Please buttermilk in a large bowl. Combine Flour and semolina in a separate bowl and season to taste. Heat vegetable oil in 2 saucepans to 1800c (see note).

    Dip prawns in buttermilk, toss in flour mixture and shake off excess. Deep-fry for 2-3 minutes or until crisp and golden, then drain on absorbent paper and season to taste. Repeat with balmain bug tails, whiting lemon, basil and fennel, cooking until crisp and golden. Serve immediately with aioli.

    using 2 saucepans of oil helps to speed up the frying process while keeping the oil both hot and clean.
