  1. Step

    Place the potatoes into a large pot and cover with cold water. Bring to the boil and simmer until potatoes are just starting to cook on the edges.

    Preheat oven to 220C. Place a deep-sided roasting tray in the oven with the olive oil to heat.

    Drain potatoes in a colander and toss a few times to rough up the edges.

    Remove the tray with the hot olive oil from the oven. Carefully pour in the potatoes and garlic cloves and stir to coat in oil. Season with salt and pepper. Roast turning potatoes occasionally, until golden and crisp. Approx. 45-60 minutes.
