Method

  1. Step

    5 Min

    Crush the juniper berries and peppercorns in a pestle and mortar.Run the back of knife over the flesh to pick up any stray bones, remove with tweezers.Trim the thinnest part off belly and any bones.

    10 Min

    Put the salt and sugar in a bowl with crushed berries and corns.Roughly chop herbs into the mix , add orange & lemon zest using micro plane, and mix well.Lay fish onto cling film & pack it onto the fish.Warp tightly and place on top of other.

  3. Step

    20 Min

    Leave in the oven for 2 days. Swapping the 2 sides from top to bottom.Slice on the diagonal very thinly .When slicing the fish you should be able to see the knife in the flesh, if you can’t it’s thick.
