  1. Step

    Place eggplant in a colander, toss with salt to remove bitterness and set aside to drain, place 1 tbs of the olive oil in a saucepan over low heat and gently cook the onion for 6-8 minutes until soft and translucent. Add the garlic and cook for 1 minute, then Add cook for a further 3-5 minutes until The tomato starts to break down. Set aside

    While you cook the eggplant, Rinse the eggplant well and pat dry with Paper towel. Heat half the remaining olive Oil in large frypan over medium-high Heat. Cook half the eggplant for 3-4 Minutes until golden brown and tender. Remove and drain on paper towel. Repeat With the remaining oil and eggplant. Place the tomato mixture in a bowl and Stir in the fried eggplant. Add the lemon Juice, remaining herbs, a little more salt And plenty of black pepper. Drizzle with a little extra virgin olive oil and serve with a dollop of yoghurt.
