Orange Blossom and Pistachio Cake Recipe

    Whisk eggs, sugar and vanilla extract together. Mix olive oil and butter together and slowly pour into the egg mixture while whisking at medium speed. Mix pistachios, polenta, flour and baking powder together and add them to the wet mix while whisking on low speed, until just combined. This is supposed to be a wet batter. Do not add extra flour. Grease 10 x 150ml/5 fl oz mini oval or rectangle loaf tins. Bake at 160°C/320°F for 15 minutes or until just cooked in the center.

    Mix orange blossom water through yoghurt frosting. Spread cakes with frosting then garnish with chopped pistachios and freeze-dried raspberries as per photograph
