Pan Fried Tomato, Zucchini, Orecchiette, Basil and Ricotta

    15 Min

    Heat oil in a large frying pan over medium to high heat. Add the zucchini and cook until starting to colour. Add tomato and cook until starting to soften and blister, tossing occasionally and crush lightly in pan. Add garlic and chilli and fry for a further minute or until soft. Add the pasta and the reserved pasta water back to the pan and shake to combine ingredients. Toss through the butter and most of the parmesan and beat to emulsify the sauce. Remove from heat before adding the rocket and allowing to wilt slightly.

    Place into serving bowl, tear over basil leaves and top with big dollops of ricotta, remaining parmesan and freshly ground black pepper.
