Passion Fruit Sponge, Yogurt Frosting

Mix all plain flour, baking powder, corn flour, eggs, caster sugar.unsalted butter and other all Ingredients and Preheat the oven to 180°C/350°C.

Method

  1. Step

    10 Min

    Preheat the oven to 180°C/350°C. Line a 12-hole, 80 ml/2 ½ fl oz capacity cupcake tin with papers. Mix the flour, baking powder and cornflour and sift together twice. Beat the eggs and sugar for about 7-8 minutes, until pale and thick. Gently fold the flour into the beaten eggs.

    15 Min

    Mix the butter with 80 ml/2 ½ fl oz of boiling water and then add to the mixture, stirring gently. Carefully fold through passion fruit pulp. Divide between the tins and bake for 15 minutes. Cool for 10 minutes in the tins before turning out onto a wire rack to cool completely.

    10 Min

    Spread with yogurt frosting and top with extra passion fruit pulp.
