    5 Min

    Cut the zucchini lengthways on a mandolin into 3mm strips, season with salt, Place zucchini in a colander with ice and place over a bucket to drain ,Dry roast the mustard seeds, crush in a mortar and pestle.

    15 Min

    Place everything except zucchini in a pot, simmer for 15 mins, Let cool slightly, Squeeze the liquid from the zucchini (Tip: Try a salad spinner before squeezing)

    5 Min

    Then add liquid from pot, leave covered and refrigerated for 2 days before serving, Ensure liquid is not hot as zucchini will cook instead of pickle.
