Pineapple Coconut Steamed Jellies

Pineapple and Coconut Steamed Jellies is Delicious Food.

Grease 6x200ml dariolemoulds. Rub the butter and flour together in a bowl until they resemble breadcrumbs, then stir in the baking powder, suet and brown sugar. Stir in the pineapple, eggs and 30ml of the rum until the mixture comes together.Divide the mixture among the moulds, filling to three-quarters full. Cover each with squares of buttered foil with a pleat down the centreand tie with kitchen string.

Method

    Stir in the pineapple, eggs and 30ml of the rum until the mixture comes together.

    Steam the moulds for 40 minutes. (If you don’t have a steamer, put the moulds in a large pan and pour in boiling water until it comes halfway up the sides of the moulds. Keep the pan covered, simmering away-don’t let it boil dry.) Meanwhile that the reserved pineapple juice, caster sugar and the remaining rum in a pan until the sugar has melted. Increase the heat, bring to the boil, thenredice to a thick syrup.

    Turn out the steamed puddings, drizzle with syrup, sprinkle over the fresh coconut or dried coconut shavings, then serve with cream.
