Pistachio Biscuits

Mix shelled pistachios, unsalted butter, softened, caster, sugar, egg, rose-water, plain flour, sifted, baking power, sifted, plain flour & all the ingredients and cook it fast.

  1. Step

    Drain the pistachios well then add to the batter with the flour & baking power. Fold through until a stiff dough forms.

    Sift extra flour over clean surface, knead dough for 30 sec.

    Dived dough in half, roll into 2 logs 5cm in diameter, wrap in plastic, refrigerate for 30 mins.

    Preheat the oven to 1800C. Remove the dough logs from the refrigerator & slice into 5 mm rounds.

    Place the biscuits 2 cm part on a baking tray lined with baking paper.

    Place the biscuits in the oven and bake until lightly golden.

    Remove from the oven and leave to cool on a wire rack.

    Place the pistachios in a small bowl, cover with water & set aside for 30 minutes.

    Place the butter and sugar in a bowl & beast until pale & creamy.

    Add the egg & mix until combined.

    Add the rose-water, & stir until smooth.
