Spiced Chickpea Soup

This Is Simply Spicy & Healthy, Make It Fast & Serve.

Heat 1 tsp of olive oil in a large saucepan over a medium-high heat,Return pan to medium-loz heat,Add the chickpeas, tomatoes & stock & bring to the boil.

Method

  1. Step

    10 Min

    Heat 1 tsp of olive oil in a large saucepan over a medium-high heat, add the chorizo & cook until crisp. Remove & set aside.

  2. Step

    15 Min

    Return pan to medium-loz heat, add the remaining oil & onion, cook until onion is soft. Add the garlic, chilli & spices, cook for 1 minute further.

  3. Step

    25 Min

    Add the chickpeas, tomatoes & stock & bring to the boil. Descrease the heat to low, partially cover and simmer for 25 minutes. Set aside to cool slightly.

  4. Step

    20 Min

    Blend half of the soup until smooth and return to the saucepan with the remaining soup. Place over a medium heat, season with sea salt & freshly ground black pepper & warm through.
