Method

  1. Step

    30 Min

    Preheat the oven to 2000C (4000F/Gas 6). Place the tomatoes, garlic, carrot and fennel in a roasting tin. Drizzle with olive oil and sprinkle with salt and pepper. Cover with foil and bake for 1 ½ hours. Uncover and bake for another 30 minutes, or until the vegetable are well cooked.

    Transfer the vegetables to a food processor or blender and blend until combined. What you are looking for is a smoothie’s mixture with some texture. If you prefer a completely smooth consistency, you can pass the soup through a sieve, but I personally love it with a bit of texture.

    Serve in soup bowls. Top each with basil leaves if you wise and a drizzle of extra virgin olive oil serve with ricotta toast.
