Method

  1. Step

    15 Min

    For tomato sacue, heat oil in a saucepan, add passata and stir over medium heat for 10 minutes. Add wine and 1/4 cup water and cook for 15 minutes or untill mixture begins to reduce and thicken. Season to taste with sea salt and freshly ground black pepper.

    20 Min

    For spinach rice stuffing, heat olive oil in a saucepan, add green onion and garlic and sauté for 5 minutes or until softened. Add rice and cook, stirring, until golden brown. Add remaining ingredients and 1/2 cup water and simmer, stirring for 5 minutes or until the spinach wilts and rice has absorbed liquid. Season to taste and cool.

    40 Min

    Preheat oven to 170c. stuff squid with rice mixture, but do not overfill. Secure openings with wooden or metal skewers. Place squid in an ovenproof baking dish, add the tentacles and pour over tomato sauce. Bake for 30 to 40 minutes or until squid and rice are tender and sauce has thickened. Remove from oven, halve each squid horizontally, and transfer to plates and spoon over a little sauce. Serve immediately.
