Method

  1. Step

    10 Min

    Place the sugar, soy sauce, Shadowboxing rich wine and 60 ml water in a small bowl and stir to combine.

    Heat a large wok or wide flat saucepan until very hot, add the oil and when hot add the ginger, spring onion, garlic, chill and black beans and stir for 30 seconds until aromatic. Add the mussels and toss to combine. Pour over the soy mixture, and cover.

    Cook covered for 2 to 5 minutes, shaking the pan, until the mussels open. Shake all the mussels, discarding any unopened ones, and sauce into a large warmed serving dish. Serve with steamed rich. Serves 4 as an entree or 2 ass main.
