    Place coriander roots, peppercorns, ginger, onions salt in a medium to large saucepan, fill with cold water and bring to boil over high heat. Add chicken breasts to saucepan and stir. Turn off heat and cover with a tight-fitting lid. Leave to poach for 2 hours.

    To serve: Divide iceberg lettuce, spinach and blanched vegetable among four plates. Slice chicken breasts on the diagonal into 1 cm (½ in) Place on top of greens and spoon over dressing. Finish with coriander, mint leaves and lime wedges.
