Traditional Pork With Fennel Sausage And Borlotti Beans

Add dried borlotti beans, tomatoes, pork, potato, fennel seeds, white vinegar, chives and other ingredients. Then Cook it easy and serve.

  1. Step

    5 Min

    Place borlotti beans in 3 times the amount of water to beans with 1tsp bicarb and leave overnight.

    2 Min

    Next day – drain beans and place in pot with tomatoes, garlic, potato, sliced onions, fennel seeds, sage leaves, bouquet garni, olive oil and enough water to cover.

    Skim off any skum off the surface and braise for 1 ½ hours or until tender.

    Season with salt and pepper, olive oil and white vinegar.

    Remove potato, tomatoes and bougetgarni. Discard bougetgarni but crush the tomatoes and potatoes and place back into pot.

    Add chopped parsley, chives and stir all through together.

    Allow to cool into liquid.

    Serve with 2 grilled pork and fennel sausages, sprinkled with herbed breadcrumbs

  9. --Note:

    Have some extra water on the side to top up as the beans are needed to be submerged in water throughout the cooking process.
