    Place the water, milk and salt in a saucepan and bring to a simmer over medium heat. Slowly pour in the polenta, whisking continuously. Continue to cook, stirring often, for about 45 minutes. Remove the pan from the heat and beat in half the butter, parmesan and lemon juice. Check the seasoning, adding more salt if needed. Add the remaining knob of butter (90g) on the top of the polenta and cover with a paper cartouche. Leave in a warm place until needed. Polenta can be reheated the following day once only.
